Elizabeth, a third-generation coffee farmer, was born on November 25, 1977, in Dosquebradas. She was born in this municipality after her parents emigrated from a small town called Marquetalia-Caldas in search of a "better future." She completed her primary and secondary education there. However, it was in the city of Pereira where she had the opportunity to study at the Universidad Tecnológica de Pereira and became an Electrical Engineer. She worked in her profession for 12 years at one of the city's most prestigious companies, holding a high position as Chief of Power and Special Design at MAGNETRON, a company dedicated to the manufacturing of electrical transformers.

In 2017, along with her husband, who is a professional tour guide, they decided to purchase a coffee-producing farm in the rural area of Pereira and completely change their lives. The La Unión farm, which had been producing coffee since 1952 according to documents, was a conventional production farm at the time of purchase, meaning it practiced monoculture and used chemicals for the control of fungi, insects, and weeds. Since October 2017, Elizabeth has completely transformed her life with this project. She aimed to restore a natural space and free it from the use of chemicals, promote sustainable coffee production and rural tourism, create job opportunities for the local community, and provide dignified housing for the hosts—people, wildlife, and flora—living within the territory known as Finca La Unión.
